To a medium saucepan add honey, butter, sugar, and melt them together over medium heat, whisking until all ingredients are melted.
Remove the pan from the heat when the sugar is dissolved and add the eggs. Whisk vigorously until all the eggs are incorporated.
Add the baking soda and sprinkle it with lemon juice to activate the baking soda. Whisk the mixture until no lumps remain. Fold the flour gradually with a spatula. ( if you see the dough doesn’t come together and is still very sticky you can add a bit more flour. If you have extra time, place the dough in the fridge for an hour, it will be easier to roll the dough)
Cut the dough into 10 pieces. Flour the surface and roll each piece into a thin 9″ circle around 1/8 ” thick. Place a 9″ plate over your rolled dough and trace around with a knife to get a circle. Keep the scrapes they will be used for the decoration.
Heat the oven to 400F. Place the layers on the tray covered with parchment paper and bake the layers for 4-5 mins or till they turn a golden color. Transfer to a wire rack and let the cool. Bake the scrapes. Once they are cooled, pulse them together with roasted walnuts in a food processor.
