Serves 4
INGREDIENTS:
- 4 ripe but firm peaches, halved and pitted
- 1 tablespoon clarified butter or ghee
- 2 tablespoons brown sugar
- 1/4 cup sliced raw almonds
- 1 cup plain Greek yogurt
- 2 tablespoons honey, or to taste
- Fresh oregano, mint, or thyme (optional for garnish)
INSTRUCTIONS:
Heat the clarified butter or ghee in a large skillet over medium heat.
Sprinkle the peach halves with brown sugar. Place them in the skillet, cut side down, and cook for 2 to 3 minutes or until the peaches begin to caramelize. Turn the peaches over and sprinkle with sliced almonds. Cook for an additional 2 minutes, or until the peaches are completely soft.
While the peaches are cooking, mix the Greek yogurt with honey in a small bowl. Transfer the cooked peaches to a serving plate. Dollop the honeyed yogurt over the warm peaches. Drizzle with additional honey and garnish with fresh herbs if desired before serving.
