Ukrainian Fluffy Apple Oladky

Oladky are a staple of Ukrainian breakfast, similar to American pancakes but smaller, thicker, and fluffier. Traditionally made with yogurt or kefir, they often served with sweet toppings like jam, honey, or sour cream. This recipe adds a fun twist with apple slices and a sprinkle of cinnamon. Enjoying oladky freshly made with a cup of your morning coffee or tea.

INGREDIENTS

  • 7 oz whole milk plain yogurt (Greek yogurt works great)

  • 1 large egg

  • 1 1/2 tablespoons granulated sugar

  • 3/4 teaspoon kosher salt

  • 3/4 teaspoon baking soda

  • 3/4 cup all-purpose flour

  • 1 medium-large apple, sliced 1/8 inch thick

  • 1/4 cup sunflower or vegetable oil for frying

  • Ground cinnamon, for serving

INSTRUCTIONS

In a medium bowl, gently whisk together the yogurt, egg, salt, sugar, and baking soda. Gradually add the flour while continuing to whisk until you achieve a smooth and thick batter. Cover the bowl with plastic wrap and let the batter rest for 15 minutes.

Preheat 1/4 cup of oil in a large frying pan over medium heat until the oil is hot and shimmering. Drop a small scoop (about three tablespoons) of the batter into the hot frying pan and gently place an apple slice on top. Reduce the heat to medium-low. Repeat with the remaining batter, taking care not to overcrowd the pan.

Cook the oladky until the bottom is crispy and golden brown and the top is set (no longer runny), which should take a couple of minutes. Then carefully flip each oladky to fry the other side for an additional 2 to 3 minutes, or until the apple is soft and caramelized.

Transfer the cooked oladky to a platter lined with paper towels to absorb any excess oil. Sprinkle with ground cinnamon before serving.
