Gluten-Free Sweet Apple Fritters

Ingredients
  

  • 1 1/2 pounds Granny Smith apples cored
  • 1 large egg
  • 4 tablespoons cornstarch
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 oz butter for frying
  • powdered sugar ground cinnamon, or honey for serving

Instructions
 

  • Grate the apples and transfer the grated mass into a mash thieve. Gently press with a back of a spoon to drain most of the juice out. Reserve or drink the apple juice.
  • In a medium bowl, mix the grated apples and egg together. Add the corn starch, baking powder, and salt. Mix well to combine.
  • In a frying pan, melt 1 oz of butter over medium-high heat. Spoon 2-3 tablespoons of apple mixture into the hot butter, flatten slightly with a back of a spoon.
  • Fry 3-4 minutes on each side or until golden brown. Transfer to a serving plate. Continue with the rest of the mixture. Add more butter when needed.
  • I like serving these fritters very hot dusted with some powdered sugar and cinnamon.
